Savory pie with bell peppers and tomatoes

A healthy and delicious snack

Ingredients for 6

  • 4 roasted and peeled orange bell peppers
  • 4 roasted and peeled red bell peppers
  • 4-5 tbsp. olive oil
  • 750 g tomatoes, peeled, deseeded and coarsely chopped
  • 2 cloves of minced garlic
  • Salt and pepper
  • 2 tbsp. finely chopped thyme
  • 1 red chili, deseeded and finely chopped
  • 10 slices frozen puff pastry, thawed
  • 1 egg yolk
  • 2-3 tbsp. finely chopped basil or parsley

Directions

Savory pie is something you can easily make yourself. This recipe for savory pie is with tomatoes and bell peppers, but you can fill the pie with any vegetables you like.

  1. Preheat the oven to 210°C.
  2. Cut the peppers into long strips about 1 cm wide.
  3. Heat 2 to 3 tablespoons of oil and fry the tomatoes for about 20 minutes, until the liquid has evaporated.
  4. Add the garlic, salt, pepper, thyme and chili and let the mixture simmer for about 10 minutes until the sauce has thickened.
  5. Lay the slices of dough together and roll them into one piece of approximately 45 × 20 cm and 3 mm thick.
  6. Cut a strip of dough on each side of 11 cm by 2 cm from the dough sheet and paste the strips on the edge of the dough with some water to stick it in place, so that there is a raised edge.
  7. Place the dough on a lined baking tray and prick the dough with a fork regularly.
  8. Whisk the egg yolk with 1 teaspoon water and use it to brush the dough.
  9. Bake the dough for about 10 minutes in the middle of the oven at 210°C.
  10. Turn the oven back to 190°C.
  11. Divide the tomato mixture over the dough and divide the pepper strips.
  12. Brush the peppers very thinly with oil and bake for 20 to 25 minutes in the middle of the oven.
  13. Sprinkle the basil before serving it.

Bell pepper soup with cheese biscuits

Even better with homemade broth.

Ingredients for 6

  • 4 shallots, finely chopped
  • 5 orange bell peppers, diced
  • 2 tbsp. olive oil
  • 250 g tomatoes, chopped
  • 2 sprigs of thyme
  • 1 leaf of laurel
  • 6 dl vegetable or chicken broth
  • Salt, pepper
  • 2 tbsp. crème fraîche, lightly beaten
  • 2 tbsp. finely chopped basil or parsley

Directions

Tip: For this bell pepper soup you can also make the broth yourself. It would make this bell pepper soup recipe with cheese biscuits even more delicious, although it does take a little more work.

Soup

  1. Fry the shallots and peppers for about 6 to 8 minutes in the oil.
  2. Add the tomatoes, thyme, laurel and broth and cook everything for about 20 minutes on low heat until the vegetables are tender.
  3. Meanwhile, make the cheese biscuits.
  4. Puree the soup and use a sieve if necessary.
  5. Season with salt and pepper.
  6. Once served, add a scoop of sour cream to the soup.
  7. Sprinkle with basil. Serve with the cheese biscuits.

Cheese biscuits

  1. Mix 125 grams of grated old cheese with 1 teaspoon of dried thyme leaves.
  2. Put a good amount of distance between the tablespoons with cheese mixture on a lined baking sheet.
  3. Divide the mixture into a circle and make sure there are no gaps between the cheese.
  4. Bake the cheese biscuits 8 to 12 minutes in a preheated oven at 175°C until crisp and golden.
  5. Allow to cool slightly and take them off the baking tray with a pancake knife.
  6. Leave on a piece of baking sheet to cool.

Warm bell pepper salad with prawns

A lunch time dish with bell peppers.

Ingredients for 4

  • 1 green, yellow, red and orange bell pepper
  • 1/2 bunch of spring onions
  • 100g of black olives, seedless
  • 1 red chillies
  • 12 king prawns
  • 4 tablespoons of olive oil
  • 3 tablespoons of white balsamic vinegar
  • Salt, pepper

Directions

A warm lunch dish with peppers. The recipe for this warm salad takes half an hour.

Warm bell pepper salad

  1. Wash the bell peppers, cut them in half and remove the seeds and seed pods.
  2. Put the pepper halves with the cut sides facing down on the preheated grill.
  3. Remove the bell peppers from the oven as soon as the skin is tanned and starts to get blisters.
  4. Allow to cool in a plastic bag and then take the skin off.
  5. Wash the spring onions and slice the white part into thin rings and halve the olives.
  6. Deseed the chiles and chop them up.

Prawns

  1. Remove the king prawns from their shell, remove the gut, then wash and peel them.
  2. Heat 3 tablespoons of oil in a pan and lightly braise the chillies in it.
  3. Fry the prawns in chilli oil on each side for 2 to 3 minutes.
  4. Season with salt and pepper.

Finish

  1. Mix the salad ingredients in a bowl.
  2. Mix the remaining oil with chili oil from the pan and balsamic vinegar and pour it over the dish.
  3. Serve with fried king prawns.
